As it’s Thursday, and the last Thursday of 2015, we decided to do a customary #ThrowbackThursday. We’ve been reminiscing on the year gone by and here are some of our highlights!
We really hit the ground running in 2015 with the official launch of our brand new restaurant, The Chef’s Table by Stefan Matz. It was a pleasure welcoming Stefan to the Delphi team!
The Chef’s Table by Stefan Matz brought a new dining experience to Connemara. Here, at Delphi Resort we want all of our guests to be part of the experience, which is why this restaurant incorporates a unique ‘Open Kitchen’ so you can engage and interact with the Chefs while they rustle up your gourmet feast! So far the restaurant has received rave reviews and fantastic write ups.

The Delphi Food & Wine Series took place this Autumn, with 6 themed gourmet evenings celebrating organic food and local produce. Joining forces with local suppliers we presented a series of engaging and entertaining (not to mention delicious) evenings culminating in a festive ‘Christmas Table by Stefan Matz’.
In case gourmet dining isn’t enough excitement to kick off the year we were also delighted to have a slice of Hollywood visit us. The cast and crew of the up and coming movie Pilgrimage came to stay at Delphi Resort while they were filming in the beautiful Connemara landscape.
Guests included Jon Bernthal (The Walking Dead, The Wolf of Wallstreet) Tom Holland (The Impossible, How I Live Now), Richard Armitage (The Hobbit, Captain America) as well as a host of local talent such as Hugh O’Connor & John Lynch.
It was a pleasure having you and we can’t wait to see the movie!
At the beginning of the year we unveiled our brand new Wellness Studio as part of the Delphi Spa. It’s a beautiful, zen space designed especially for yoga, meditation, pilates and much more!
It’s already been put to great use – We welcomed Yoga Guru, Kenneth Ryan, back to Delphi this year for a Wellness & Yoga Retreat in October. The group enjoyed a blissful weekend full of yoga, meditation, forest walks, rejuvenating teas and delicious juices (Ken studied with the Juice Master himself, Jason Vale!). While we were sorry to say goodbye to our wonderful guests, everyone went home feeling fully revived and refreshed!
Another one of our highlights from the year was our Walking Weekend
with Michael Gibbons. In September, the renowned archaeologist Michael Gibbons hosted a guiding walking tour from Delphi Resort. Over the course of the weekend they roamed the rugged Connemara landscape to uncover over 7,000 years of Irish Settlement.
Everyone had a fantastic time and even learned a thing or two about Ireland’s fascinating history. Along the way they took some breathtaking photos of the awe-inspiring journey, you can see more of them here.
2015 was jam packed full of more Adventure than ever before. From Easter and our Hawk Walks, Aware’s Cycle4Light Festival, through the Summer and our spooktacular Halloween- we couldn’t even begin to describe it all but here is a small selection of our favourite photos from the year!

As always 2015 saw us welcome a number of businesses, organisations and Sports Teams to undergo our Everest Program, including Topaz, Irish Ladies Golf, Westport Dental and many more. A huge thank you and well done to everyone who took part throughout the year!
A special thank you as well to our talented facilitators – performance psychologist Gerry Hussey and our amazing Adventure Team!
And, of course, one of our biggest highlights was YOU!
